Yardlong beans are very versatile beans. Despite common name, the pods are actually only about half a yard long. The crisp, tender pods are eaten both fresh and cooked, used in curries and stir-fried dishes, but also served raw in Som tam salad or together with a Nam phrik. They are at their best when young and slender. They are sometimes cut into short sections for cooking uses.
