Pork belly is a boneless cut of fatty meat from the belly of a pig. In the United States, bacon is most often made from pork bellies. It is popular in Thai cuisine, though pork belly is not widely seen at Thai restaurants outside of Asia. One of the most popular dishes ordered at our Chiang Mai restaurant is called Pad Kraphao Moo Grop (ผัดกะเพราหมูกรอบ), which uses crispy deep-fried pork belly slices (Moo Grop) as the meat ingredient.
