Bai makok is the leaf of the Spondias mombin, a relative of the cashew. In Thailand the young leaves are served raw with certain types of Nam phrik. The taste is sour and slightly bitter. The fruit of this tree are also eaten, and sometimes used as a secondary ingredient in Som Tam (Papaya salad).
