Spicy Minced Pork Salad
One Thai food group that is often overlooked by westerners is salad. Of course most of you are familiar with Som Tom, our delicious green Papaya Salad, but did you know that we have a delicious minced meat salad call Larb? It's a spicy combination of chopped lean meat, toasted and ground rice, ground hot chili, mint, shallots, and other seasonings. This recipe for Larb Moo is made with chopped pork loin, but you can use ground beef or chicken for an equally delicious result.Try it, you'll love it.

Ready in: 20 - 30 Minutes
Ingredients:
- 1/2 pound Ground Pork Loin
- 1 bunch Spearmint
- 1/2 small Red Onion
- 1 - 2 teaspoons ground dried Thai Chili
- 1 1/2 Tablespoons Toasted Ground White Rice
- 1 Green onion
- 1 - 2 Tablespoons fresh Lime juice
- 2 or 3 Coriander / Cilantro Leaves
- 2 teaspoons Fish Sauce
- 2 teaspoons Light Soy Sauce
- 2 teaspoons White cane sugar
- 1 teaspoon Salt
Basic Directions:
1) Heat a wok over medium flame and add oil. Stir fry the chopped pork until it is mostly cooked.
2) Add water to the pan, just enough to get the pork moist. Add salt, sugar, soy sauce, and fish sauce and continue cooking for about 1 minute.
3) Add the toasted ground rice, ground chili, and lime juice. Cook and stir until slightly thickened.
4) Add half the onion or shallots, saving the rest for a garnish at the end. Cook until the onion is a little soft.
5) Remove from heat, then add green onion, coriander (cilantro) leaves, and mint leaves.
6) Serve on a small plate to be shared. Sprinkle on some more of the ground rice. Garnish with cilantro, mint, and green onion.
